Healthy Tip: Try reducing the amount of sugar you use in your baking recipes by 20% and add just a little more of the other flavor elements in it. I'll bet that you will enjoy the less sweet product more!
The Chocolate Therapist
Chef: Julie Pech
Dish: The Chocolate Therapist Artisan Truffles
Healthy Tip: 70%+ dark chocolate has been shown to help the heart by reducing blood pressure, which occurs because chocolate contains natural compounds that help dilate the blood vessels. Moderation is the key, of course! No more than 1 to 2 ounces of dark chocolate per day.
The Summit Steakhouse
Executive Chef: Patrick Swetnam
Dish: Veal Scaloppine al limone with Mushroom En Croute
Healthy Tip: I always use olive oil where possible and mushrooms because they are very nutritious for you and your heart. That's why scavengers love them. The choice of Veal was because how lean the meat is and with using cornstarch instead of flour for the dredge also sauteing the veal in olive oil helps instead of butter. Veal demi-glaze is full of protein and very good for you.
Uncorked Kitchen
Chef: Eric Robbins
Dish: Roasted Pork Tenderloin with Balsamic Mustard and Herbs
Healthy Tip: While seafood is always considered a heart healthy choice, don't forget about lean cuts of pork such as Pork Tenderloin. It's a great alternative to seafood and can satisfy any craving you may have for red meat. However, steer clear of the fatty cuts of pork like pork belly, shoulder, and butt! A great way to get added heart healthy fiber into your diet is to make a side salad, using faro, wheat berries, and even bulgur wheat, toss with a light olive oil dressing and some nuts and you have a great side dish or even lunch.
Vesta Dipping Grill
Executive Chef: Brandon Foster
Dish: Wild Salmon Tartare, Asparagus, Apples & Horseradish Vinaigrette
Healthy Tip: Have balance in your life. East well and often, know what helps your heart and what doesn't. Eat lots of omega'3's, and watch your salt intake whenever you can. Exercise, do yoga, and for the love of god quit smoking. I also read recently that there are flavonoids in chocolate that are known to help stave off heart disease so be sure to eat your chocolate as well!
